TODAY’S RECIPE IS A TASTY TRADITIONAL VEGETABLE MUSAMPALA.
Musampala is made out of pumpkin leaves and is eaten mainly by the Lenje tribe found in central Zambia.
Pumpkin leaves are washed, cut and cooked for a few minutes in salty water.After that they’re dried in the sun for about a month.
YOU WILL NEED:
500 grams musampala
To get correct measurement use a kitchen scale or an empty 500grams tin of butter.
1 large tomato
A pinch of soda
A pinch of salt
1 litre water.
500 grams pounded groundnuts.
METHOD:
Soak the leaves in clean cold water for ten minutes.
Wash thoroughly
Put water in a medium pot and allow to boil.
Add soda and allow to cook for 5 minutes.
Add the vegetables and allow to cook for 10 minutes.
Stir and allow to cook for another 10 minutes.
Drain some water and leave some.
Add tomatoes and allow to cook.
Add pounded groundnuts and a pinch of salt.
Cover the pot and cook for 10 minutes
Stir gently and cook for another 10 minutes.
When the groundnuts are cooked remove from the boil and allow to cool.
Serve with nshima cooked with cassava or maize meal.
Makes 4 servings.
