Peanut Buttered Fresh Sweet Potatoes

You will need:

1 kg fresh sweet potatoes

Pinch of salt

Peanut butter (homemade) 1 kg

This makes 5 servings



Wash the sweet potatoes in clean water.

Put water in a bowl

Peel the sweet potatoes and soak them in water for 5 minutes

Cut them into thick rings and soak them in water again to prevent them from changing colour.

Put water in a pot and bring to boil.

While the water is boiling, add a pinch of salt and the sweet potato rings. Cover with a tight lid and allow cooking for 20 to 30 minutes.

Put unshelled groundnuts/peanuts on a pan and fry them until golden brown. Put them in a mortar and start pounding them until peanut butter is produced. Remove the peanut butter from the mortar and place it in a bowl. Add a bit of water to the peanut butter and stir gently. When the peanut butter is ready, add it to the sweet potatoes. Cook for 20 minutes and simmer for 10 minutes. Remove from the heat and allow to cool.


This mouthwatering meal is good for lunch. Try it now!!!!!
